One Pot Chicken Cacciatore With Zesty Sweet Potato Mash

 

“This rustic one pot chicken recipe is bursting with flavour and so nutritious. Ideal to prepare in advance & freeze for later.”

Serves 4

       Ingredients

  • 2 tablespoons olive oil
  • 4 boneless skinless chicken thighs
  • 1 onion halved and thinly sliced
  • 3 garlic cloves minced
  • 2 carrots diced
  • 2 celery sticks chopped
  • 150g sliced pancetta chopped
  • 125g button mushrooms sliced
  • 1 cup pitted Kalamata olives
  • ½ cup dry white wine
  • 1/2 cup of low sodium stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Chopped flat leaf parsley to garnish
  • 3 medium sweet potatoes, peeled and chopped.
  • Juice of 1 lime
  • ½ cup parmesan cheese

 

How To Prepare

Heat oil in large pan over medium high heat. Add chicken pieces and cook until browned all over. Transfer to a plate and set aside. Add onion, celery, carrot and pancetta, mushrooms and olives to the pan and cook over low for 8 minutes until onion softens. Add the garlic and mushrooms and cook for a further minute.

Return chicken to the pan, add the wine and simmer for 2 minutes.

Add the tomatoes, dried herbs wine and stock. Bring to the boil, then reduce heat to low and cook uncovered for about 40 minutes, until sauce thickens. Stir occasionally.

20 minutes into chicken cooking time, make the zesty sweet potato mash.

Boil sweet potato until soft – approximately 10- 15 minutes.

Mash the sweet potato, stir in lime juice and parmesan and season with salt and pepper.

Serve chicken and sweet potato mash with a garnish of fresh parsley.
