Rustic and filling, just what you need to warm yourself up on a chilly evening.
4 Italian style sausages thickly sliced
2 sticks celery, sliced
2 large carrots, sliced into half moons
2 tsps Tuscan spice mix
4 cups low sodium vegetable stock or homemade stock
1 onion finely diced
3 cloves of garlic finely diced
2 cans chopped tomatoes
1 can cannellini beans
2 cups diced new potatoes
2 cups baby spinach
Fresh grated parmesan cheese, chopped parsley for topping
Crusty bread to serve
Heat a splash of olive oil in a large pot add sausages, celery, carrots, onion and garlic and cook for 7 to 10 minutes stirring a few times until vegetables have softened.
Add Tuscan spice mix, tomatoes, beans, stock and potatoes.
Simmer until potatoes are tender, 20-25 minutes.
Add baby spinach and cook until wilted, 1 minute.
Scoop into bowls and top with parmesan cheese and parsley and serve with crusty bread.
